Why the gauge matters

A thin pan fails at the seam. So we stopped putting one in.

A commercial patila lives on an open flame for eight hours a day. The two places it gives way are the welded side seam and the joint where the base meets the wall — both of them heat and cool at a different rate to the metal around them.

Our patila and cook-and-carry bodies are deep-drawn from a single sheet, so neither joint exists. The wall is a uniform 2 mm from the 25-litre size right through to the 125-litre. That is why the range carries a lifetime guarantee against cracking.

From sheet to shelf

How a patila gets made

Sheet

Krome 16+ magnetic stainless is cut to blank size, gauge chosen for the vessel rather than for the cheapest sheet that will pass.

Deep draw

The blank is drawn into a body in one piece. Wall and base come from the same metal — there is no seam to weld and none to fail.

Base & fittings

Copper is bonded on where the shape needs it, then handles and lugs are welded and dressed back flush.

Polish & check

Mirror-polished, then measured against the size chart and marked with the size number you see stamped on every piece.

Magnetic stainless steel

Krome 16+ ferritic stainless — it takes a magnet, which means it works on induction as readily as it does on a gas ring or an open flame.

Jointless where it counts

The deep vessels are drawn from one sheet. No welded side seam, no base joint, nothing to open up after a few hundred heat cycles.

Copper where it helps

Biryani degdas, lagans and mahi tawas get a thick copper bottom, because a wide shallow vessel over one burner will otherwise scorch in the middle.
